The Melt Mobile was launched in 2012 when Darlene and Diana, long time friends, purchased a paddy wagon. Combining their culinary prowess and business savvy, along with a good amount of fearlessness, the duo took their dairy infatuation and grilled it between two slices of buttery artisanal bread and created the “Original Melt”. The canvas was set and the griddle was hot. Since that first ultimate grilled cheese sandwich, Melt Mobile has stuffed these scrumptious creations with everything from pulled pork, Angus burgers and slow braised short rib, to seasonal veggies, Diana’s famous meatballs, cheeses from around the world, and even peanut butter, bananas and Fluff!

This is Melt Mobile, a modern approach to everyone’s favorite comfort food, grilled cheese. Melt Mobile has taken an American classic and adapted it for how people are eating today; from scratch, creative, comforting sandwiches infused with originality, sustainability, and quality ingredients at its core.
This isn’t your ordinary food truck. We’re a gourmet grilled cheese truck specializing in creative, comforting sandwiches made with local artisanal breads, imported and local cheeses, and the highest quality fresh, organic meats and produce.

We source high quality, domestic and imported gourmet cheeses to perfectly compliment our chef’s menu creations. You can’t have the best grilled cheese without the best cheese!
Artisanal Breads
The best sandwiches require the best bread. Our chefs insist upon only ever using artisanal breads that have that are perfectly crisp on the outside and soft and fluffy on the inside.

Our meats are locally sourced and all natural. To achieve those tender, juicy and mouth-watering bites, your meats need to be the best.
